Last year for Mother’s Day I wrote a post with a list of seven easy brunch recipes. It was, in fact, an invitation to be a little less consumerist in a day that, like many others, has become too commercial.
The suggestion was that, instead of buying a shallow gift for our mothers, we would be able to prepare a delicious special brunch, or a breakfast in bed, to make them feel like princesses and for a day not to move a finger.
Among the list there is this healthy recipe of fruit skewers with gluten-free pancakes which also look very cute. I confess that I prepared it for Valentine’s day, but don’t you think your mother would love these beautiful heart-shaped fruit skewers?
This year I’ve decided to publish a specific brunch, or breakfast, recipe, which, in addition to being fairly easy to prepare, is pretty healthy. Ideal for those mothers who take care of themselves or who need a little push to take care of themselves a little more.
It also seems unbelievable that I still haven’t publish a healthy French toast recipe on the blog 🙈 The inspiration for this post came to me thanks to on the recipes that we prepared for our book of 25 healthy brunch recipes. It’s not the same but I confess that there are similarities.
The reason the title of this post is “Healthy French Toast” is because, as per my knowledge, this version is healthier that the typical French Toast recipes.
- The bread I have used is made with 100% whole wheat flour.
- I have only used one teaspoon of sugar in the recipe which, moreover, is not refined sugar but whole cane sugar.
- The vanilla I have used is pure, not the one that is usually bought at the supermarket as “vanilla aroma”.
- The filling is 100% natural since it’s made only macadamia nuts, vanilla and strawberries.

For the filling we will follow the macadamia nuts vegan cheese that I’ve published last week, but we will add some strawberries and vanilla to it.
Finally, if you want to cut strawberries in the form of a rose to give it a cute touch, go ahead because it’s very simple. I followed the instructions on this video.

- >> FILLING <<
- Leave the nuts to soak in hot water for one hour.
- Remove the nuts from the water but save the water.
- Put the nuts in a blender together with 4 tablespoons of the saved water, a pinch of salt, the strawberries and the vanilla.
- Mix everything until it becomes a spreadable dough. For a more creamy consistency add a little more water.

- In a bowl, beat the egg with the milk.
- In a plate mix the sugar with the cinnamon.
- Soak the two sides of each slice first in the egg with the milk and then with the sugar and cinnamon.
- Heat a teaspoon of coconut oil in a skillet.
- Fry each slice on both sides, remove from the pan and place them on a plate.
- Put the filling on top of a slice of bread, place the other over the filling and then fry one last time the French toast.
Notes
The filling will be enough for two French toasts.
