Last year for Easter I wrote a post that was a compilation of funny recipes that would add a festive touch to an Easter brunch.

Among those recipes there was one that I found particularly funny and, therefore, I have decided to reproduce it in a easy and healthy version.

Easter Bunny with pancakes - Healthy Brunch Recipe
Yep, it’s a healthy Easter bunny seen from behind or, depending on how you want to interpret it, it looks like crushed on the plate 😀
To prepare the pancakes, you only need 3 ingredients: banana, eggs and flour. This time I used whole wheat flour, but if you have to avoid gluten, you can prepare the pancake batter following this recipe with almond flour.
Also, if you cannot ingest dairy, you can substitute the quark cheese with a dairy-free cream cheese.

To prepare this recipe is more important to be creative than to have cooking skills. Also, keep in mind that if you do not get the perfect shape by the time you are making the pancakes, you can always prepare two big pancakes and then cut them into the shapes you need.

This recipe is ideal if you have children at home, but I think it is so funny that even adults will be surprised by it. Besides, I’m sure that anyone who sees this dish cannot help but smile.

Ingredients

1 banana
2 eggs
¼ cup (40 g) organic whole wheat flour
2 tablespoons quark cheese
1 medium strawberry

Instructions

  1. Cut the banana into slices of 2 cm approx. and place it in a blender. Keep two slices of ½ cm each for decoration.
  2. Add two whole eggs and the flour to the blender.
  3. Beat everything until there are no lumps.
  4. In a frying pan melt some coconut oil and prepare a small round pancake (for the head) and a much larger pancake (for the body). Now you just need the ears and the leg.
  5. For the tail and paws: use a fork to crush a medium sized strawberry and mix it with two tablespoons of quark cheese (or cream cheese).

    Cute idea! Have you had any experience in making the pancakes without flour, but just with bananas and a couple eggs? Great for those trying to count calories and gluten.

      That's a great idea, Angie, specially for those who need to avoid gluten. I just thought they weren't a good fit for this recipe.
