Bacon and egg cupcakes – Brunch recipes

In a traditional brunch, in my opinion, bacon and eggs cannot be missing! Do you agree? 

These bacon and eggs cupcakes are the perfect recipe to combine them and even ad an original touch.

Ingredients

- 6 slices of bacon
- 4 small eggs
- 4 medium size mushrooms
- grated parmesan cheese
- salt
- oregano

Instructions

  1. 1. First of all fry the bacon in a non-stick pan. There’s no need to add fat – the bacon will produce enough itself. Don’t overcook it, otherwise it will become too firm and will be difficult to shape. Allow it to cool.
  2. 2. Fry up a mixture of onion, garlic and parsley. Add the finely chopped mushrooms and a pinch of salt. When they are done, allow to cool.
  3. 3. Preheat the oven to 180.
  4. 4. Place the bacon in the moulds. It’s important to make sure that you’ve covered the bottom and sides of the mould well to ensure there are no holes.
  5. 5. Add the mushrooms.
  6. 6. Add the grated cheese.
  7. 7. Now all that’s missing is the egg on top. Try to get enough of the white to fill the mould, but no more.
  8. 8. Bake for 9 minutes and remove from the oven before the yolk of the egg goes yellow.
  9. 9. Decorate with a pinch of oregano.

Notes

To prepare these cupcakes it’s best to use silicon or metal moulds. Paper ones don’t really work, because the egg is too liquid and the bacon too greasy.
